BACK OF HOUSE MANAGER

Full-Time | Treasure Island, FL

ABOUT THE ROLE

We are seeking an experienced and driven Back of House Manager to lead our kitchen operations. This is a hands-on role — you will spend the majority of your time on the kitchen floor, working alongside your team to uphold the highest standards of food quality, consistency, efficiency and structure. Our menu features Italian-inspired cuisine with a global flair, centered around our signature Coal Fired Pizza. Hands-on experience with pizza dough is a must, from-scratch preparation, proofing, and stretching to achieving the perfect char and cook in a coal-fired oven. This role is for someone who is not afraid to step onto the line, solve problems in real time, and help create a culture of professionalism, urgency and teamwork.

This is an exciting opportunity for a motivated culinary leader who is ready to make an impact. As we continue to grow, there is a potential opportunity to spearhead the launch of a new Breakfast program.

KEY RESPONSIBILITIES

Oversee all back-of-house operations and ensure smooth, efficient kitchen performance during service
Lead, train, mentor, and schedule kitchen staff to maintain a high-performing team
Full Knowledge of the handling of pizza dough and train staff on our signature coal-fired pizza process.
Develop and implement strategies to increase sales while actively managing and reducing labor and food costs
Hire, onboard, train, and when necessary, terminate kitchen staff in accordance with company standards
Manage shift coverage — proactively find coverage for call-outs or step in personally to ensure kitchen operations are never compromised
Maintain and enforce food safety, sanitation, and quality standards at all times
Manage inventory, ordering, and vendor relationships to minimize waste and control costs
Create and maintain prep lists, opening/closing checklists, and station standards to ensure every shift is set up for success.
Hold the team accountable for urgency, communication, cleanliness, and execution during service
Identify operational inefficiencies, and implement systems to improve ticket times, workflow, and overall kitchen performance.
Collaborate with ownership and front-of-house leadership to align on menu development and operational goals
Drive consistency in food preparation, presentation, and portioning across all shifts
Play a key role in planning and potentially leading the opening of a new Breakfast service

QUALIFICATIONS

5+ years of experience in a kitchen management role, preferably in a full-service restaurant environment
Hands-on experience with pizza dough preparation is required — coal-fired oven experience strongly preferred
Familiarity with Italian cuisine and global culinary techniques
Proven track record of reducing food and labor costs while maintaining quality
Experience in hiring, training, and managing kitchen staff
Strong leadership skills with the ability to motivate and develop a diverse kitchen team
Flexible availability to work opening or closing shifts based on business needs and seasonal demand
Willingness to cover or fill in for staff when necessary
Solid understanding of food safety regulations and kitchen best practices
Food Safety Manager Certification (or ability to obtain upon hire)
Ability to work a flexible schedule including evenings, weekends, and holidays
