Purchasing ManagerAbout IT Trattoria

IT Trattoria is a growing restaurant group inspired by authentic Italian cuisine, combining high-quality ingredients, refined hospitality, and strong operational standards. With multiple restaurant locations and continued expansion plans, we are committed to excellence, efficiency, and collaboration across all areas of the business.

We are currently seeking a highly organized and detail-oriented Purchasing Manager to join our team and support procurement operations across the group.

Position Overview

The Purchasing Manager will oversee all procurement activities across the IT Trattoria group, including food, beverages, disposables, and cleaning supplies.

This role will be responsible for managing purchasing processes, maintaining inventory and order management systems, analyzing food costs, and collaborating with restaurant managers, vendors, and the accounting team to ensure operational efficiency and cost control.

The ideal candidate is analytical, proactive, highly organized, and comfortable working in a fast-paced hospitality environment.

Key Responsibilities

Manage all purchasing-related processes, including ordering, inventory management, food cost control, and reporting.
Serve as the primary administrator and subject matter expert for XtraCHEF, the company’s purchasing, inventory, and food cost management platform.
Collaborate with restaurant managers, franchise partners, and the accounting team to resolve purchasing and vendor-related issues.
Maintain recipes and food cost data while identifying trends and recommending corrective actions to improve profitability.
Train restaurant teams on purchasing procedures, inventory management, and system usage.
Evaluate, select, and manage vendors based on pricing, quality, reliability, and service levels.
Negotiate pricing, contracts, and purchasing terms with suppliers.
Build and maintain strong vendor relationships.
Represent the company at vendor meetings, food shows, and industry events.
Support both company-owned and franchise restaurant operations.

Qualifications

Bachelor’s degree or equivalent professional experience.
Minimum of 2 years of experience in purchasing, supply chain management, hospitality, restaurant operations, or a related field.
Strong negotiation and vendor management skills.
Excellent analytical and problem-solving abilities.
Advanced proficiency in Microsoft Excel.
Experience with inventory management and purchasing systems.
Strong organizational skills and attention to detail.
Ability to work independently and manage multiple priorities.
Excellent verbal and written communication skills.
Bilingual English and Spanish preferred.
