Location: Lofty Roasting Works, Encinitas, CA Department: Culinary / Product Development Reports To: General Manager

Job Summary

The Pastry Chef – Innovation & Product Development is responsible for leading the creation, testing, and execution of innovative pastry and baked goods for the company. This role combines culinary creativity with operational excellence to develop seasonal, signature, and core pastry offerings that elevate the guest experience while maintaining consistency, profitability, and operational efficiency.

Working collaboratively across departments, the Pastry Chef partners with the Director of Coffee to develop beverages and seasonal drink innovations. This position also works closely with the Operating Director and Café Standards & Innovation Manager to create and refine both sweet and savory menu offerings for all café locations.

The ideal candidate is an experienced pastry professional who is passionate about innovation, understands production baking at scale, and enjoys transforming creative ideas into successful café products.

Key Responsibilities

Product Innovation & Menu Development

Lead the development of new pastries, desserts, breads, and savory bakery items for LOFTY and Talitha cafés.
Research industry trends, ingredients, techniques, and consumer preferences to drive menu innovation.
Develop seasonal limited-time offerings and signature menu items.
Create standardized recipes with precise specifications to ensure consistency across production.
Test and refine recipes based on guest feedback, operational efficiency, food cost, and quality standards.
Continuously evaluate existing menu items and recommend improvements or replacements.

Beverage Collaboration

Partner with the Director of Coffee to develop seasonal beverage programs and pastry pairings.
Collaborate on drink innovation, flavor profiles, syrups, toppings, and complementary bakery offerings.
Participate in beverage tastings and menu planning sessions.

Cross-Functional Collaboration

Work alongside the Operating Director and Café Standards & Innovation Manager to develop sweet and savory café menu items.
Collaborate with café leadership to ensure products are operationally executable across all locations.
Support menu rollouts with recipe documentation, training materials, and production procedures.

Production Leadership

Execute and oversee production of pastries, and bakery items while maintaining quality standards.
Establish production schedules and PAR levels to support café demand.
Ensure consistency in taste, appearance, texture, and presentation.
Maintain recipe integrity and production efficiencies.
Support bakery team members through coaching and hands-on leadership.

Food Cost & Operational Excellence

Develop recipes that align with targeted food cost and margin goals.
Evaluate ingredient sourcing and recommend new vendors or products when appropriate.
Reduce waste through efficient production planning and inventory management.
Maintain accurate recipe costing and yield documentation.

Food Safety & Quality

Maintain the highest standards of sanitation, allergen awareness, and food safety.
Ensure compliance with all local health department regulations.
Maintain organized, clean, and safe production environments.
Follow FIFO inventory practices and proper ingredient storage procedures.

Qualifications

Minimum 2-3 years of professional pastry or bakery experience, including product development.
Previous experience leading bakery or pastry teams preferred.
Degree from an accredited culinary or pastry program preferred, or equivalent professional experience.
Strong understanding of laminated doughs, pastries, breads, desserts, and savory baked goods.
Experience developing recipes for production at scale.
Knowledge of food costing, yield management, and inventory control.
Strong organizational and project management skills.
Excellent communication and collaboration skills.
Ability to thrive in a fast-paced, creative environment.
Valid Food Handler Certification required.
Flexible schedule including early mornings, weekends, and holidays as needed.

Physical Requirements

Ability to stand for extended periods.
Frequently lift up to 50 pounds and occasionally up to 100 pounds with assistance.
Ability to bend, reach, twist, and work safely around commercial bakery equipment.
Comfortable working in high-temperature kitchen environments.

They inspire collaboration, elevate product quality, and help define the future of both brands through thoughtful culinary innovation.

Pay: $20.00 - $30.00 per hour
