Full Job Description

Introduction

We are seeking a Culinary Director for Island Provisions. This individual should have professional restaurant experience leading and directly supervising all areas of the kitchen - inventory, ordering, costing, scheduling, recipe creation, and team development.

This job is very hands on and is not one that is always behind a desk. It will be amongst both Island Provisions locations - Downtown Charleston and John's Island. Estimated hours fall between 40-50 hours per week.

Responsibilities / Job Duties

Foster and create a positive work environment
Cook & prepare all menu items as well as seasonal/special items.
Manage grab & go case, routinely add seasonal offerings
Create the BOH schedule and ensure coverage of shifts for callouts
Interview and hire BOH candidates with assistance from Director of Operations and Ownership
Maintain kitchen equipment and cleanliness and adhere to DOA regulations.
Assist in creating menu items
Collaborate with kitchen team for events and custom catering opportunities
Set up workstation at the beginning of each shift
Quickly prepare all food items ordered, to include breakfast, lunch, and any catering or evening menu items
Maintain proper portioning, measuring, compilation of prepared items according to production sheets and approved recipes
Properly present all food items to provide maximum appeal, quality, temperature and freshness
Label and stock all ingredients in their proper places so they can be organized and easily accessible. Ensure that all ingredients, dry goods, food, other kitchen items are stored properly following ‘First In, First Out’
Follow proper holding, preparation, and holding guidelines
Complete assigned equipment and station cleaning schedule
Ensure communication with teammates for timing and preparation of menu items, to-go orders, 86’d items, etc.
Complete all food orders (Limehouse, Cheney, etc.) and ensure proper receiving/storing delivery of goods
Work safely, consistently using designated PPE (gloves, head covering, etc)
Ensure all other kitchen employees follow standards for PPE, sanitation/cleaning, preparation, quality, plating, organization, labeling, FIFO, etc. Any normal standards a line/prep cook should be following
Verbally discipline or prepare write-ups when kitchen team members are not following company standards or policies, assist with terminations when necessary
Create a routine monthly cleaning list. Delegate cleaning and organization tasks to other team members during downtime.
Ensure proper documentation of food waste (prepared foods and ingredients)
When checking in orders ensure accuracy. Contact vendors for credits or replacement items when applicable.
Manage monthly inventory
Routinely track item costing for all kitchen ingredients
Complete any additional tasks provided by Director of Operations and/or ownership

Experience & Requirements

- Minimum of 2-3 years of kitchen management

- Experience directly in a cafe is preferred

- ServSafe Management, Culinary Degrees, and other certifications are also preferred

Pay: $55,000.00 - $65,000.00 per year
