Full Job Description

Position Summary

Prohibition is seeking an experienced, hands on Sous Chef to help lead daily kitchen operations and maintain consistent execution across every service.

This is a working leadership position. The Sous Chef will spend significant time on the line and in production while also providing direction, organization, training, and accountability to the kitchen team.

The right candidate is dependable, organized, calm under pressure, and capable of running a strong service without requiring constant supervision.

Primary Responsibilities

Kitchen & Service Execution

Lead the line during assigned services
Ensure stations are prepared and ready before service
Maintain food quality, presentation, portioning, and recipe standards
Monitor ticket times and coordinate the line during high volume periods
Identify and resolve service problems quickly
Ensure opening and closing procedures are completed correctly
Maintain strong communication between BOH and FOH during service

Prep & Organization

Coordinate daily prep priorities and production
Ensure appropriate product levels are available for service
Identify shortages before they become service problems
Maintain organized walk ins, storage areas, prep areas, and stations
Ensure proper labeling, dating, rotation, and storage
Minimize unnecessary waste and overproduction

Team Leadership

Provide daily direction to cooks and prep employees
Train employees on recipes, stations, equipment, and kitchen procedures
Coach employees when standards are missed
Help develop stronger cooks and future kitchen leaders
Maintain a professional, respectful, accountable kitchen environment
Lead by example in urgency, cleanliness, organization, and work ethic

Quality & Food Safety

Ensure every dish meets Prohibition's standards before leaving the kitchen
Maintain consistent recipes, portions, and presentation
Enforce proper food handling, cooling, storage, and sanitation procedures
Maintain clean and organized work areas throughout service
Help keep the kitchen prepared for health inspections at all times

What This Position Is Not

This is not an Executive Chef position.

The Sous Chef will not be expected to independently manage every administrative aspect of the kitchen. Menu strategy, overall kitchen direction, major purchasing decisions, budgeting, and other senior culinary management responsibilities remain with senior leadership.

The Sous Chef's primary responsibility is daily execution and leadership of the kitchen team.

Qualifications

Strong professional kitchen experience
Previous experience as a Sous Chef, Kitchen Manager, Lead Cook, or similar leadership position preferred
Strong line cooking and production skills
Ability to lead a busy service
Strong organizational and communication skills
Working knowledge of food safety and sanitation
Ability to train and coach kitchen employees
Reliable attendance and punctuality
Availability for nights, weekends, holidays, and high volume services

A culinary degree is not required. Kitchen competence, leadership ability, reliability, and consistent execution matter more.

What Success Looks Like

The Sous Chef should make the kitchen stronger and more consistent every day.

A successful Sous Chef ensures the kitchen is prepared before service, cooks understand their responsibilities, food is executed correctly, problems are handled quickly, standards remain consistent, and the kitchen does not require senior leadership to personally solve every routine operational issue.

The goal is simple: run an organized kitchen, lead the team, and execute great food consistently.

Pay: $58,000.00 - $64,000.00 per year
