Sous Chef

Job Types: Full-Time

Reports to: Executive Chef

Salaried Position

This Position is for The Cavalier Golf and Yacht Club, a private country club in Virginia Beach. The Carte Sous Chef is responsible for the daily culinary operations of the Club’s primary member dining outlets (Grill Room, Formal Dining, Patio). Unlike the Banquet team, which focuses on volume, this role is obsessed with detail, consistency, and execution of made-to-order cuisine.

Serving as the "Sous Chef” of daily dining, you will manage the evening line, expedite service, and drive menu creativity. You are the standard-bearer for food quality, ensuring that the burger on Tuesday is just as excellent as the salmon on Saturday.

1. Culinary Excellence & Service Execution

Line Command: Lead the physical line during peak lunch and dinner service. Act as the primary expediter, ensuring ticket times are met and plating specifications are flawless before dishes leave the kitchen.
Consistency: Ensure that all a la carte menu items are prepared exactly to recipe specifications every time. Conduct daily tastings of sauces, soups, and prep items.
Menu Development: Collaborate with the Executive Chef to design seasonal a la carte menus. Own the "Daily Specials" program, utilizing seasonal ingredients to keep the membership engaged and excited.
Staff Supervision: Directly supervise the a la carte team (Line Cooks, Prep Cooks, Pantry). Manage schedules, break times, and daily station assignments.

Club Etiquette: Ensure staff maintains a professional appearance and demeanor.

Training: Mentor cooks on proper technique, sanitation, and organization. Foster a culture of professional growth, turning line cooks into leaders.
Experience & Education:
Minimum of 3-5 years of culinary experience in a high-volume, upscale environment (Fine Dining Hotel, Private Club, or Upscale Restaurant preferred).

Skills:

Line Proficiency: Must be able to work every station on the hot line (Sauté, Grill, Broiler) to support the team during call-outs or extreme volume.
Computer Literacy: Proficiency in Microsoft Office (Excel/Word) and club management software (e.g., Jonas, Northstar) is a plus.
Refined Palate: A strong understanding of flavor profiles, seasoning, and modern plating techniques.

Attributes:

Calm Under Pressure: Able to maintain a quiet, controlled kitchen environment even during a "full board" dinner rush.
Service Heart: Understands that "The answer is yes; what is the question?" is the golden rule of private club hospitality.

Physical Requirements

Ability to stand for extended periods (8+ hours).
Ability to lift up to 50 lbs.
Exposure to heat, steam, and cold storage environments.
Flexibility to work nights, weekends, and holidays as club business dictates.
Minimum of 1 year of supervisory experience (Sous Chef or Junior Sous level).
Degree in Culinary Arts or a related field is preferred but not required with equivalent experience.
