Full Job Description

Position Summary

The Restaurant Manager is responsible for the complete operational, financial, and administrative performance of the restaurant. This role requires strong leadership, accountability, and adherence to brand standards to ensure exceptional guest experience, cost control, compliance, and profitability. The Manager is expected to be highly available, proactive, and hands-on in all aspects of restaurant operations.

1. Operational Oversight

● Manage all daily restaurant operations to ensure consistent food quality, speed of service, and full compliance with brand standard operating procedures.

● Report to the restaurant fully in uniform and prepared to begin work no later than 10:30 a.m., unless otherwise scheduled, and conduct pre-shift meetings and operational readiness checks prior to opening.

● Enforce all restaurant security procedures, including proper use of locks, safes, alarm systems, and access codes.

● Conduct daily pre-opening walkthroughs to proactively identify, address, and resolve operational issues.

2. Labor and Staff Management

● Oversee the hiring, onboarding, training, scheduling, supervision, and performance evaluation of all Front of House (FOH) in compliance with labor laws and company policies.

● Prepare, finalize, and publish employee schedules no later than two (2) weeks in advance to support staff planning and coverage consistency.

● Maintain labor costs at or below twenty-nine percent (29%) of gross sales, ensuring all schedule adjustments are properly documented.

● Audit and correct all prior-week timesheet discrepancies by Monday at 12:00 p.m. (noon), including missed punches, breaks, overtime, and payroll-impacting errors.

● Remain reachable by phone during all restaurant operating hours. In the event of critical operational issues—such as uncovered call-outs—the General Manager must provide immediate managerial support and report on-site when necessary.

3. Food Cost and Inventory Control

● Ensure all food and beverage inventory is accurately tracked, rotated, and maintained in accordance with FIFO standards.

● Conduct regular inventory counts and maintain accurate ordering to prevent stockouts, overages, or waste.

● Verify the accuracy and integrity of all inventory data and submit product orders in a timely manner to ensure uninterrupted service.

● Maintain food costs at or below twenty-seven percent (27%) of gross sales, promptly addressing variances through waste reduction, ordering controls, and vendor coordination.

4. Guest Experience and Brand Management

● Oversee guest service flow and staff interactions to ensure consistent hospitality and a high-quality dining experience.

● Respond to all guest complaints or feedback within forty-eight (48) hours, documenting all refunds, voids, and discounts for reporting purposes.

● Maintain a minimum average guest rating of 4.5 out of 5.0 across all major review platforms, including Google and Yelp.

5. Sales Growth and Profitability

● Drive sales growth and improve average check value through upselling strategies, promotions, and ongoing staff training.

● Participate in weekly performance reviews with ownership and implement corrective actions to address underperformance.

● Maintain same-store sales performance within ±1% year-over-year, unless otherwise adjusted by the Employer.

6. Administrative and Reporting Obligations

● Submit the following weekly reports no later than Tuesday at 12:00 p.m., unless otherwise directed:

- Hours Worked vs. Sales Report

- Incident and Disciplinary Report

- Weekly Operational Walkthrough Report

- Refund, Discount, and Void Report

- Daily Closing Cash Report

- Inventory Report

- Bi-weekly Training Report

Submit the following monthly report:

● Staff KPI Performance Summary Report

● Upload and maintain all current Food Handler and MAST permits for employees in a shared Google Drive folder accessible to management. Documentation must be updated promptly upon hire or renewal.

● Ensure all administrative responsibilities—including payroll submissions, vendor documentation, compliance filings, and internal records—are accurate, complete, and submitted on time.

● Publish the employee schedule every Monday, two (2) weeks in advance, with at least 95% accuracy between scheduled and actual worked shifts. All changes must be documented with justification and time-stamped in the scheduling system. Repeated or unjustified discrepancies may be treated as a performance issue.

7. Cleanliness, Safety, and Facility Maintenance

● Oversee daily cleaning of kitchen, dining, and restroom areas and ensure the facility achieves a minimum 90% score on all health and safety inspections.

● Immediately document, report, and follow up on all equipment or maintenance issues until resolution.

● Ensure completion and retention of all required daily logs, including temperature, sanitation, and pest control records.

8. Legal Compliance and Professional Conduct

● Enforce company policies related to harassment, discrimination, equal opportunity, food safety, and labor law compliance.

● Report any legal violations, safety hazards, or conduct that may endanger staff or guests to the Employer without delay.

● Uphold the highest standards of professionalism, ethical behavior, and alignment with the values and expectations of Tendon Kohaku.
