Full Job Description

ABOUT TRAIL 87:

Trail 87 is a modern American restaurant on the Mount Snow ski corridor in West Dover, Vermont. We run a focused, skilled kitchen that holds scratch standards on signature items while executing efficiently at volume. We are a seasonal business with real peaks and we need people who take ownership, stay calm under pressure, and care about the food they put out.

THE ROLE

This is a working leadership position. You are on the line every shift, you are managing the kitchen, and you are accountable for quality and consistency when the Head Chef is off the floor. We need someone who can cook at a high level and also run a shift, manage a team, and keep systems intact under pressure.

WHAT YOU WILL DO

Execute service on the line alongside the team every shift

Manage daily prep flow, station readiness, and line setup

Run the kitchen independently when the Head Chef is off-property

Supervise line cooks and prep staff during your shifts

Train, onboard, and hold the team accountable to standards

Manage ordering and weekly inventory in coordination with the Head Chef

Maintain food rotation, labeling, and storage standards

Assist in tracking food costs and flagging waste

WHAT WE ARE LOOKING FOR

Required:

3+ years of professional kitchen experience, with at least 1 year in a lead or senior cook role

Strong line skills across hot applications, cold prep, and basics

Ability to manage people in a live service environment

Organized, calm under pressure, and reliably present

Food handler certification or ability to obtain one

Preferred:

Experience in a seasonal or resort-market restaurant

Familiarity with farm-forward, locally sourced cooking

Experience with food cost tracking and ordering

Experience working alongside or under a strong chef
