Full Job Description

Vai’s Italian Inspired Kitchen + Bar and Entourage Modern American Kitchen is looking for a talented Chefs to join our incredible culinary team! We offer a fun environment, with a friendly staff, in a privately owned restaurant to join our family of excellence and enthusiasm.

In this position, you will gain experience and learn how to cook some of the finest rustic Italian inspired food in the suburbs. Career potential is endless with the valuable experience you will have in our kitchen.

Responsibilities:

· Direct report to the Culinary Director or Executive Chef

· Direct food preparation, production, and control of the entire culinary operations

· Responsible for maintaining quality of food product and ensuring consistency in food and standards

· Responsible for the selection, training, and development of the personnel within the culinary department

· Responsible for the financial management of the operation

· Consult with the Executive Chef on a weekly basis as well as with other departments as necessary

· Additional duties as necessary and assigned

· Professionally represent Vai’s Italian Kitchen + Bar or Entourage Modern American Kitchen in the community, industry, organizations, and events

· Participate as a team player with all departments

· Provide constructive feedback to all departments

· Approach all encounters with guests and employees in an attentive, friendly, courteous, and service-oriented manner

· Comply with certification requirements as applicable for position to include: Food Handlers, Alcohol Awareness, CPR, First Aid and COVID

· Maintain food costs and labor costs within budget guidelines

· Establish and maintain culinary system files according to Vai’s Italian Kitchen + Bar standards

· Conduct monthly department meetings with kitchen staff

· Motivate, coach, counsel and discipline all Kitchen personnel according to S.O.P.'s

· Prepare and conduct Kitchen interviews and follow hiring procedures according to S.O.P.'s

· Conduct all 90 day and annual employee performance appraisals according to S.O.P.'s

· Prepare employee shift schedule according to the business forecast, payroll budget guidelines and productivity requirements’

· Maintain a clean kitchen by implementing and maintaining a standard of "Clean As You Go."

· Work the line or expedite peak meal periods by maintaining a "hands on" approach.

· Complete all paperwork required by Vai’s Italian Kitchen + Bar on a timely basis

· Review B.E.O.s and attend B.E.O. Meetings

· Develop and implement systems to control waste

· Review/change menus as per Culinary Partner’s directive

· Maintain awareness of local competition and industry trends

· Maintain a professional working relationship and promote open lines of communication with managers and other departments

· Ensure that Kitchen employees are always attentive, friendly, helpful and courteous to guests, all other employees and managers

· Maintain follow through for all guest requests and complaints presented to the kitchen

Requirements:

Culinary degree from an accredited school is a plus, but not required
Must have 2+ years of chef experience in a full service, moderate to high volume restaurant
The ability to run a chef-driven, “scratch” kitchen

· Current on all culinary trends and active in the furthering of his/her own culinary development

· Extremely creative with strong service skills and demonstrated ability to energize a diverse team of culinary professionals

· Proven financial planning skills with the ability to analyze and implement strategies for improvement

· Computer literate

Solid track record of success in previous positions while demonstrating upward career growth
Ability to speak and understand Spanish is a plus
Ability to lift and/or carry up to 50 lbs. as needed
Ability to work 10–11-hour shifts with the ability to stand, walk or sit for extended periods of time
