About us

Olivero Assistant General Manager (AGM)

Olivero in Wilmington is looking for a FOH leader to join our team. We need someone with a minimum of 3 years of restaurant management experience. Fine dining or upscale casual settings, and cocktail experience preferred. We offer a chef-owned and centered restaurant, focused on growing the team. Candidates must have a positive attitude, strong communication skills, a die-hard love for hospitality, a strong work ethic, and work efficiently in a team environment. Position Purpose/Summary: The Assistant General Manager is responsible for overseeing service operations for Olivero, including management of the service staff, service staff training, scheduling, guest relations, and ensuring the financial literacy of Olivero. The AGM directly supervises all hosts, servers, bartenders, support staff, and other hourly service team members to ensure the success of the restaurant. Under the direction of the Co-Executive Chef and GM the AGM Manager develops, implements, oversees, and executes systems, procedures, and methods that achieve agreed-upon goals of Olivero.

Essential Functions:

Oversee the employment and management of the service staff.
Ensure adherence to Olivero standards in the areas of hiring and orientation, scheduling, training, coaching, performance management, professional development, and daily shift routines for all service employees.
Create the service staff schedule and oversee/execution of delegation of duties
Use Sling as a tool for staff scheduling, and ensure that schedules are posted within established deadlines.
Enforce SOPs for service set up and sidework.
Utilize a running side work task list to hold service staff accountable.
Ensure the completion of daily/weekly sidework tasks.
Implement training procedures as outlined by the Co-Executive Chef and GM.
Print onboarding packets, checklists, and acknowledgement forms for new hires.
Schedule Training Shifts for new hires with intention.
Anticipate training schedules alongside normal service schedules.
Ensure the completion of each New Hire’s training program.
Oversee the guest experience.
Maintain a strong presence on the floor and actively engage with staff/guests to enhance and maintain Olivero standards.
Investigate and resolve complaints regarding food quality, service, or accommodations.
Answer email inquiries, proactively check in and support servers with guest interactions, maintain a strong presence on the floor to forecast or resolve issues.
Monitor preparation methods, portion sizes, garnishing and presentation of food and beverages to ensure that menu items are prepared and presented in an acceptable manner.
Engage in the financial health and maintenance of the service operation.
Understanding the Financial impact of projections.
Enter data on excel sheets daily for review and financial literacy.
Report daily financial snapshots through blasts and emails.
Perform payroll operations in the absence of the GM.
Complete cash logs, deposits, and recordings with accuracy.
The ability to appropriately handle stress and interact with others is an essential function of this position.
Regular, timely, and punctual attendance is an essential function of this position.
Maintain alcohol inventory and service supplies.
Follow projections for ABC liquor, beer, and wine orders, and restaurant supplies in coordination with Chefs and GM.
Complete monthly inventory.
Ensure that service item counts are submitted via Margin Edge (ME) by established deadlines.
All other duties as assigned.
Ordering and other assigned Administrative Duties.

Education/Training/Licenses/Certifications:

21+
Serve Safe- able to obtain within 6 months of employment
High School Diploma or equivalent, 3 years relevant job experience preferred but not required
Valid Driver’s License
