Uccello’s Ristorante: Caledonia, Downtown Grand Rapids, East Beltline, Grandville, Rockford, Standale/Walker
Herb & Fire Pizzeria: Grandville, Knapp’s Corner

We’re seeking a passionate, hands-on Culinary Chef to lead our team. This is a full-time, salaried leadership role for a working chef who thrives in a high-volume environment - someone who can drive the business, develop the team, and jump on the line to execute at a high level.

Culinary Chef Job Description:
Lead and develop the kitchen team while overseeing daily operations, food quality, and cost control in a high-volume environment. This is a hands-on, working chef role responsible for menu features and LTOs, while actively supporting the line to ensure consistency, efficiency, and an exceptional guest experience.

Culinary Chef Duties & Responsibilities: (including, but not limited to)

Lead, coach, and develop a high-performing culinary team
Actively work the line and support all stations as needed to ensure proper execution and ticket times
Own day-to-day kitchen operations, balancing quality, speed, and consistency
Create and execute LTOs and features aligned with the Uccello’s brand
Manage food costing, portioning, and inventory to drive profitability
Create and manage team schedules while controlling labor costs based on sales forecasts and daily business volume
Oversee ordering, receiving, invoicing, and vendor relationships
Ensure all food is prepared and presented to recipe and quality standards
Maintain strict sanitation, food safety, and cleanliness practices
Complete daily line checks and ensure proper food handling, storage, and temperature controls
Hire, train, and hold team members accountable through consistent coaching and performance management
Partner with leadership on promotions, events, and sales-driving initiatives

Culinary Chef Qualifications:

6+ years of culinary experience in a high-volume, full-service restaurant
3+ years in a kitchen leadership role
Demonstrated leadership skills and ability to coach, direct, and motivate the team
Strong knowledge of food costing, inventory control, and kitchen financials
Background in banquets and off-site catering preferred
High standards for food quality, cleanliness, and organization
Comfortable working long, active shifts on your feet and lifting up to 50 lbs
