SUMMARY

The Banquet Sous Chef at La Bahia Hotel & Spa supports the Banquet Chef in planning, preparing, and executing exceptional banquet cuisine for weddings, corporate events, galas, and private dining experiences. This role is essential to maintaining our culinary standards and ensuring seamless kitchen operations across all banquet functions.

RESPONSIBILITIES AND JOB DUTIES

Assist in designing seasonal menus that highlight local Santa Cruz County ingredients and California coastal cuisine
Support the Executive Chef in developing signature banquet offerings aligned with the hotel's luxury brand standards
Help execute customized menus for guests with special dietary needs including vegan, gluten-free, and allergen-sensitive requirements
Participate in menu tastings with clients and event coordinators as directed
Assist in overseeing all aspects of banquet food preparation for events ranging from intimate gatherings of 20 to large-scale functions of 500+ guests
Coordinate with the pastry team for dessert and bread service integration
Support food cost control, portion consistency, and waste reduction initiatives
Ensure strict adherence to all food safety protocols (HACCP, ServSafe)
Maintain pristine kitchen organization and sanitation standards
Assist in leading and mentoring a team of banquet cooks and prep staff
Help conduct training sessions on technique, presentation, and safety procedures
Support scheduling and coordination of banquet kitchen staff for optimal event coverage
Foster a collaborative kitchen environment that encourages professional growth and culinary creativity
Assist in executing food service for simultaneous multiple events
Support timing coordination with front-of-house management and event coordinators
Uphold quality and presentation standards during high-volume service periods
Adapt quickly to last-minute changes in guest counts or menu modifications
Participate in post-event evaluations and continuous improvement initiatives
Work closely with service staff to support seamless guest experiences
Stay current with culinary trends and assist in incorporating them into kitchen offerings
Monitor outlet kitchen operations during peak periods alongside other culinary team members, making adjustments as needed
Help monitor staff punctuality, uniforms, and hygiene compliance
Carry out any other reasonable duties and responsibilities as assigned

QUALIFICATIONS

Minimum of 3 years of banquet or high-volume kitchen experience in a luxury hotel, resort, or fine dining environment
Culinary degree from an accredited institution or equivalent professional experience preferred
Experience supporting large-scale events (100+ guests) in upscale environments
Demonstrated experience working within kitchen teams and operations
Knowledge of dietary restrictions, allergen protocols, and nutritional guidelines
Familiarity with kitchen management software and inventory systems
Ability to assist in leading kitchen teams effectively under pressure
Knowledge of local and national culinary trends
Strong organizational, problem-solving, and analytical skills
Excellent communication and interpersonal skills
Ability to work under pressure and adapt to changing priorities
Bilingual skills a plus

Fast-paced kitchen environment with varying temperatures and noise levels
Prolonged periods of standing and walking
