Job Overview

We are seeking a passionate and skilled Smokehouse Pitmaster to lead our barbecue operations with expertise, enthusiasm, and a dedication to excellence. As the cornerstone of our smokehouse team, you will craft mouthwatering smoked meats, oversee daily cooking processes, and ensure every dish meets our high standards. Your leadership will inspire the team, uphold safety and quality standards, and deliver an exceptional experience for our guests. This role offers an exciting opportunity to showcase your culinary mastery in a dynamic environment that values innovation and guest satisfaction.

Responsibilities

Prepare, season, and smoke a variety of meats using traditional techniques and modern equipment to achieve optimal flavor and tenderness.
Supervise daily kitchen operations, including managing staff schedules, delegating tasks, and maintaining a smooth workflow.
Ensure all food safety regulations and health standards are strictly followed to guarantee a safe dining experience.
Train and mentor team members on smoking techniques, safety procedures, and customer service excellence.
Maintain inventory levels for all smoked meats, spices, wood chips, and other supplies; place orders as needed to prevent shortages.
Collaborate with management to develop new recipes, menu items, and presentation styles that excite guests.
Uphold cleanliness standards in the smokehouse area through regular sanitation practices and equipment maintenance.

Qualifications

Proven experience in managing or supervising culinary teams within a smokehouse or barbecue setting.
Strong leadership skills with the ability to motivate and guide staff effectively.
Knowledge of casino industry operations is a plus, including familiarity with casino cash handling, customer service expectations, and regulatory compliance related to gaming environments.
Excellent management skills with experience overseeing staff schedules, conflict resolution, and operational workflows.
Technical proficiency with kitchen equipment used in smoking meats as well as familiarity with casino systems such as player tracking systems (PTS).
Basic math skills for inventory management, portion control, and cash handling procedures.
Exceptional customer service skills with an emphasis on guest satisfaction in fast-paced environments.
Ability to work flexible hours including evenings, weekends, and holidays as required by casino operations or event schedules.
