Sushi Roller and Line Cook
$21.50-$23.50Hourly pay Depending on Experience plus tips
Part time and full-time positions available

This is a cross trained kitchen position for cooks who can execute with discipline, precision, and consistency.

This role is not limited to sushi only. You will be expected to operate at a high level on the sushi station and rotate into cold line or hot line stations depending on experience, volume, and operational needs. Flexibility and execution are mandatory.

We are an operator driven restaurant with high standards that do not drop. Every station matters. Every plate matters. Every shift matters.

What This Role Is

This is a performance based position for cooks who can handle structure, repetition, and accountability. You will be trusted with raw product, plating standards, and cross station execution. This role is ideal for someone who wants growth, responsibility, and long term opportunity by raising the bar consistently.

Cross Training Expectations

You will be trained and scheduled across multiple stations, including sushi, cold line, and hot line depending on skill set and operational demand.

You are expected to protect standards regardless of station. Switching stations does not change expectations for cleanliness, speed, or quality.

Role Responsibilities

Execute sushi rolls precisely to recipe and presentation standards.
Handle raw fish and seafood with proper technique, care, and food safety awareness.
Prepare rice, sauces, garnishes, and mise en place accurately.
Execute cold line items including appetizers, salads, and plated starters as assigned.
Execute hot line items when trained, including grill, flat top, or fryer support.
Maintain speed without sacrificing consistency or quality.
Communicate clearly with the kitchen and front of house regarding timing, allergies, and special requests.
Maintain a clean, organized, inspection ready workstation at all times.
Properly store, label, and rotate all food products.
Close down stations to standard at the end of each shift.

Skills and Experience

Previous experience as a sushi roller is required.
Solid knowledge of sushi rolling techniques and raw fish handling.
Experience with Mexican fusion or seafood focused concepts is strongly preferred.
Line cook experience on cold line or hot line is a plus.
Ability to work fast while staying accurate.
Comfort working under pressure during peak service.
Strong understanding of food safety and sanitation standards.

Schedule and Availability

Availability during business hours is required.
Weekend availability is required.
Flexibility to work different stations and shifts is expected.
