Full Job Description

Position Summary The Production Manager owns daily manufacturing operations across our cooking, frying, and packaging lines. You’ll be accountable for hitting production schedules, staffing and placing your team effectively, keeping inventory accurate, and maintaining full food safety and regulatory compliance — all while controlling labor, yield, and waste. This is a floor-leadership role: you’ll spend your day in the plant, not behind a desk. Key Responsibilities Production Planning & Execution

Build and manage daily/weekly production schedules to meet customer orders and forecasts
Coordinate raw material readiness, line changeovers, and run sequencing to maximize throughput
Hit output, yield, and on-time targets across cooking, frying, and packaging operations

Personnel Management & Placement

Staff each line and station based on volume, skill, and product mix; reassign as needs shift through the day
Supervise, train, and develop line leads and operators; manage attendance, performance, and accountability
Control labor cost through efficient scheduling and crewing without compromising output or safety
Onboard new hires and cross-train the team to build flexibility and coverage

Inventory Management

Maintain accurate raw material, work-in-process, and finished-goods inventory
Enforce FIFO/FEFO rotation and lot traceability for full product accountability
Monitor usage, yields, and shrink; flag and resolve variances
Coordinate with purchasing/receiving to prevent shortages and avoid overstock or spoilage

Food Safety & Quality Compliance

Operate in full compliance with USDA/FSIS regulations and our SQF program
Enforce HACCP plan controls, SSOPs, and GMPs on the floor every shift
Support thermal processing and lethality requirements, product cooling/stabilization, allergen segregation, foreign-material control (metal detection), and net-weight/labeling accuracy
Partner with QA and the HACCP Coordinator on monitoring, corrective actions, and audit readiness; maintain an inspection-ready facility at all times

Equipment & Maintenance Coordination

Coordinate with maintenance on the preventative maintenance program to minimize downtime
Ensure equipment (fryers, cookers/ovens, packaging lines) is set up and running to spec
Escalate breakdowns quickly and adjust schedules to keep commitments

Cost & Continuous Improvement

Drive yield improvement, waste reduction, and labor efficiency
Identify and implement process improvements on the floor
Report daily on production, labor, yield, and downtime metrics

Required Qualifications

3+ years of production supervision or management experience in a food manufacturing environment
Direct experience in a USDA/FSIS-inspected facility
Working knowledge of HACCP, GMPs, SSOPs, and food safety fundamentals
Demonstrated experience managing and placing hourly production teams
Inventory and FIFO/lot-traceability experience
Ability to lead in a fast-paced, physically demanding plant environment
Strong organizational, problem-solving, and communication skills

Preferred Qualifications

Experience with fried and/or cooked RTE meat products specifically
Familiarity with SQF (or other GFSI scheme) and audit preparation
Bilingual (English/Spanish) — strongly preferred given our workforce
HACCP certification
Experience with thermal processing, product cooling/stabilization, and post-lethality controls
Experience supplying grocery, retail, and/or foodservice/hospitality customers

Physical Requirements

Able to stand and walk the production floor for extended periods
Comfortable working in cold, hot, and wet processing environments
Able to lift up to [50] lbs as needed
