Full Job Description

Own back-of-house operations to deliver safe, consistent, profitable food at scale. Lead the kitchen team, manage purchasing and inventory, control costs, and ensure every plate meets spec and speed standards.

Key Responsibilities

People & Leadership
Recruit, train, schedule, and coach line/prep/dish teams; conduct performance reviews and corrective action.
Build a safety-first culture (knife safety, PPE, burns/cuts protocol) and daily pre-shift briefs.
Quality & Food Safety
Enforce recipes, portions, plating, and allergen protocols; run line checks before each service.
Maintain HACCP logs: receiving, cooling, reheating, hot/cold holding, sanitizer ppm, shellfish tags.
Drive health inspection readiness; correct violations immediately.
Production & Service
Write daily prep lists, par levels, and station guides; balance prep vs. shelf life to minimize waste.
Oversee expo and ticket flow; hit target ticket times and fix bottlenecks in real time.
Coordinate specials/menu changes with Chef/GM; run tastings and train staff on new items.
Cost Control & Inventory
Place orders, verify deliveries, and manage vendor relationships; resolve shorts/subs/credits.
Weekly inventory counts; track yield and waste; maintain target food cost % and COGS.
Portion control (scales, scoops, ladles), batch sheets, and waste logs; engineer menu for margin.
Equipment & Facilities
Maintain equipment (ovens, fryers, refrigeration, hood/Ansul); schedule preventive maintenance.
Ensure cleanliness and organization (walk-ins, dry storage, labeling FIFO, MSDS).
Administration & Compliance
Create BOH schedules to labor budget; approve timecards; manage onboarding and certifications.
Complete incident reports, temperature logs, cleaning checklists, and vendor invoices.
Uphold company policies, local/state codes, and alcohol rules for any BOH handling.

Qualifications

3–5+ years BOH leadership (Sous Chef, Kitchen Supervisor, or Kitchen Manager) in high-volume operations.
Strong knowledge of food safety (ServSafe Manager or equivalent required/obtainable within 30 days).
Proven cost control, ordering, inventory, and scheduling skills; comfortable with spreadsheets/BOH systems.
Ability to lead during peak periods, prioritize, and communicate clearly across FOH/BOH.
Bi-lingual (English/Spanish) a plus; valid Food Handler for all staff managed.

Success Metrics (KPIs)

Food Cost % / COGS at or below plan; BOH Labor % on budget.
Average ticket time within standard (e.g., brunch ≤12 min, dinner ≤14 min).
Health score ≥ 95; zero critical violations.
Waste/Yield within targets; weekly inventory variance ≤ 1.5%.
Training completion & retention; new item rollout compliance ≥ 95%.

Schedule, Work Environment & Physical Requirements

Full-time, exempt; weekends/holidays required; early prep and late closes as needed.
Stand/walk for long periods; lift up to 50 lbs; work in hot/cold, fast-paced environment.
