THE MILLWORKS IS HIRING A COMMISSARY SOUS CHEF!

Job Location: The Millworks Restaurant – Harrisburg, PA
Position Type: Full-time
Salary Range: $50,000- $60,000 (depending on expierence)

Restaurant Description
The Millworks Restaurant Group includes the largest farm-to-table, from-scratch kitchens in Central PA. Working with local farms and growers has enabled us to utilize fresh and unique ingredients. Over the past 11 years, we have received dining and hospitality awards. We’re a continually growing company that shares our values with the local community. Staff at our three locations are hard-working, talented, and a vital part of the process. Our goal is not only to serve a great meal but to ensure our guests have a wonderful experience.

The Role

Directly reports to Commissary Chef and Executive Chef and is responsible for culinary operations when they are not present.

Responsibles include but are not limited to:

Taking a physical monthly inventory, updating product list/prices monthly
Tracking Waste on a weekly basis using waste log
Daily Labor hour adjustments
Making labor cuts based on business levels
Responsible for ALL food quality, upholding staff to use of recipes, health code standards, and proper storage
Upholding standards of recipes
One on one training of new prep kitchen employees
Constant re-coaching and teaching of proper culinary techniques with current employees
Closing Check List filled out per shift

What We Are Looking For

Ability work evenings, weekends, and some holidays
A minimum of 5-year professional cook-from-scratch kitchen experience
A minimum of 3 years kitchen manager or Sous Chef expierence.
Possesses great knife skills
Great teamwork/ communication skills and good attitude
Knowledge of cooking techniques and ability to follow recipes
Ability to multi-task
Ability to keep an organized and clean workspace
Reliable and accountable
Culinary School degree preferred by not required if experienced

The Millworks is a high-volume restaurant that works towards taking advantage of local ingredients and driving sustainability while optimizing the customer experience. The restaurant serves 4,000+ customers per week between our dining room, bar, outdoor courtyard, private events room, and rooftop Biergarten. We also house our own brewery, brewing up to 15 varieties of craft beer!
