Overview
Join our vibrant culinary team as a Sushi Chef and become an essential part of creating authentic, beautifully crafted sushi. This energetic role offers a fantastic opportunity to develop your skills in a dynamic kitchen environment, supporting the head sushi chef with food preparation, ingredient handling, and maintaining high standards of cleanliness and safety. Whether you're passionate about culinary arts or eager to gain experience in the food industry, this paid position provides a lively atmosphere where your enthusiasm and dedication will shine.

Candidates with experience in seafood restaurants, omakase experience preferred, or fish filleting skills and excellent fish cutting skills are required; with strong work ethic is a plus.

Responsibilities include making sushi under head chef instructions and recipe, assisting head chef in omakase service nightly. Fish scaling, cleaning, filleting, prep support, kitchen cleaning, dishwashing, inventory organization, and assisting chefs according to restaurant standards. Applicants must be punctual, efficient, careful with premium ingredients, and able to follow detailed instructions in a fast-paced kitchen.

Tuesday and Friday: 11:00 AM to closing, usually around midnight

Wednesday, Saturday, and Sunday: shift start time varies based on business needs and chef instruction, typically between 12:00 PM and 1:00 PM, until closing, usually around midnight

Weekend availability required
Hours may vary slightly depending on service needs

Responsibilities

Assist the sushi chef with preparing ingredients such as fish, rice, vegetables, and other components for sushi rolls and sashimi. Must know how to make nigiri, and clean certain omakase fishes such as Kohada, skilled at kitchen cooking, kappo experience is a plus.
Support food preparation tasks including slicing, portioning, and organizing ingredients efficiently.
Maintain cleanliness and sanitation of workstations, tools, and storage areas in compliance with food safety standards.
Help with setting up serving stations and ensuring all items are presented attractively for customers.
Follow proper food handling procedures to ensure freshness and safety throughout the food preparation process.
Aid in inventory management by organizing supplies and notifying staff of stock levels needing replenishment.
Support catering events or special service requests by assisting with meal assembly and presentation.
Maintain the entire restaurant's cleanliness and orderliness.

Skills

Prior experience in sushi and fish handling desired; enthusiasm to learn is key!
Knowledge of menu planning, food preparation, cooking techniques, and food safety practices.
Hands-on experience in food service, kitchen operations, or the food industry enhances your ability to succeed in this role.
Strong knife skills and proficiency in meal preparation are highly valued.
Understanding of food handling regulations and sanitation standards ensures safe practices at all times.
Experience in restaurant or catering environments helps you adapt quickly to fast-paced settings.
