Full Job Description

Lone Pine Brewing Company is a Maine-based brewery with a strong focus on great

beer, great food, and creating a welcoming experience for our guests. Our Old Orchard

Beach location is a fast-paced, high-volume environment that comes alive during the

summer season.

We are looking for an experienced and motivated Kitchen Manager to lead our kitchen

team, oversee day-to-day kitchen operations, and maintain high standards for food

quality, cleanliness, safety, and hospitality. This is a hands-on leadership position for

someone who enjoys working alongside their team and takes pride in creating an

organized, efficient, and positive kitchen environment.

Job Overview

The Kitchen Manager will be responsible for the daily operation of the kitchen, including

team leadership, food preparation, inventory management, ordering, food safety,

scheduling, cost control, and maintaining Lone Pine's standards for quality and

consistency.

The Kitchen Manager will work closely with the General Manager and Front of House

leadership to ensure smooth communication and a consistent guest experience.

Key Responsibilities

Leadership & Team Management

Lead, coach, and develop the kitchen team while creating a positive and respectful work environment.
Assist with hiring, onboarding, training, and scheduling kitchen staff.
Clearly communicate expectations and hold team members accountable to Lone Pine standards.
Lead by example and remain hands-on during service and daily kitchen operations.
Work with the General Manager to address staffing needs, performance concerns, and scheduling challenges.
Maintain strong communication with Front of House leadership to ensure a smooth service.

Kitchen Operations

Oversee daily kitchen operations, including prep, service, cleaning, and closing procedures.
Ensure food is prepared consistently and according to established recipes, portions, and quality standards.
Maintain an organized, clean, and efficient kitchen.
Monitor prep levels and ensure the kitchen is properly stocked for each shift.
Identify operational issues and work with the General Manager to develop solutions.
Help establish and maintain efficient kitchen systems and procedures. Food Safety & Sanitation
Always maintain strict food safety and sanitation standards.
Ensure proper food handling, storage, labeling, temperature control, and cleaning procedures.
Maintain compliance with all local and state health department requirements.
Conduct regular inspections of the kitchen, coolers, storage areas, and equipment.
Ensure all kitchen employees follow required food safety and sanitation procedures.
Must be ServSafe Certified or willing to obtain certification upon hire.

Inventory & Cost Control

Manage kitchen inventory and maintain appropriate product levels.
Place food and supply orders as needed.
Receive deliveries and ensure products are stored properly.
Monitor food costs, waste, spoilage, and portion control.
Maintain accurate inventory and communicate ordering needs to the General Manager.
Identify opportunities to reduce waste and improve kitchen profitability without sacrificing quality.

Quality & Guest Experience

Ensure every dish leaving the kitchen meets Lone Pine's standards for quality, presentation, temperature, and consistency.
Address food quality concerns quickly and professionally.
Work with the General Manager and Front of House team to respond to guest feedback.
Help maintain a kitchen culture focused on hospitality, teamwork, and attention to detail.

Collaboration & Communication

Work closely with the General Manager and Front of House leadership to coordinate daily operations.
Communicate staffing, inventory, maintenance, and operational concerns promptly.
Participate in menu development, recipe updates, specials, and seasonal changes as needed.
Support the overall goals and culture of Lone Pine Brewing Company.

Qualifications

Proven experience as a Kitchen Manager, Sous Chef, Chef, or similar kitchen leadership role, preferably in a high-volume restaurant, brewery, or hospitality environment.
Strong knowledge of kitchen operations, food safety, sanitation, and proper food handling.
ServSafe Certification required or willingness to obtain upon hire.
Strong leadership and team-management skills.
Excellent organizational and time-management abilities.
Ability to remain calm and productive in a fast-paced kitchen.
Strong communication and problem-solving skills.
Ability to maintain high standards while working alongside the team.
Comfortable with inventory management, ordering, food costs, and waste control.
Flexible availability, including evenings, weekends, and holidays.
Culinary education or equivalent professional experience preferred.
