Position: Line Cook

Reports to: CDC/Sous-Chef

Location: Raleigh, NC

FLSA Status: Non-Exempt

Job Summary:

Peregrine is seeking a dedicated and passionate Line Cook to join our kitchen team. As a key member of our culinary brigade, you will be responsible for executing dishes to the highest standards, maintaining kitchen organization, and working collaboratively in a fast-paced, fine dining environment. The ideal candidate has a strong work ethic, attention to detail, and a commitment to consistency and excellence in every plate served.

Key Responsibilities:

· Culinary Execution & Quality Control

· Prepare and execute dishes according to Peregrine’s recipes, presentation, and quality standards.

· Maintain consistency in taste, texture, and appearance of food items while following proper portioning guidelines.

· Ensure all ingredients are properly prepped, stored, and rotated according to FIFO (First In, First Out) principles.

· Maintain a clean and organized workstation throughout service.

· Assist in plating and garnishing dishes with precision and attention to detail.

Kitchen Efficiency & Teamwork

· Work efficiently during prep and service to meet ticket times and uphold kitchen flow.

· Communicate clearly with chefs, fellow cooks, and front-of-house staff to ensure smooth service.

· Support other stations and team members as needed to ensure a cohesive kitchen operation.

· Follow kitchen opening and closing checklists, ensuring all tasks are completed with care.

Sanitation & Safety Standards

· Maintain the highest levels of cleanliness, food safety, and sanitation in accordance with health department regulations.

· Follow all kitchen safety protocols, including proper knife handling and fire prevention measures.

· Properly label, date, and store all prepared foods and ingredients.

· Monitor and report any equipment issues to the Chef de Cuisine or Sous Chef.

Qualifications & Requirements:

· Experience in Kitchen experience, preferably in a fine dining or upscale restaurant setting.

· Strong knife skills and a solid understanding of cooking techniques.

· Ability to work in a high-pressure environment while maintaining focus and quality.

· Team player with strong communication skills and a positive attitude.

· Ability to stand for extended periods, lift up to 50 lbs, and work in a fast-paced, hot environment.

· Flexibility to work evenings, weekends, and holidays as needed.

· Food Handler Certification (or willingness to obtain).
