Full Job Description

Senior Chef

PROGRAM: Food and Nutrition Services

DEFINITION: Under the supervision of the Program Manager, the Senior Chef performs the following duties in food preparation management: recipe development and modernization, menu planning, preparation and procurement of food/supply items for congregate meals, food boxes, special catering events, and health and safety; responsible for managing kitchen safety and sanitation; assists with staff and volunteer training and performs other duties as assigned.

ESSENTIAL AND IMPORTANT DUTIES - Senior Chef

Direct and oversee all functions and operations of the Food & Nutrition Program, including food preparation and sanitation, at multiple program sites in coordination with onsite program staff.
Prepare meals, assist kitchen volunteers and other program staff in preparation of daily meals.
Supervise kitchen operations in collaboration with other program managers and onsite program staff.
Meet departmental goals by decision making process, delegating tasks, and analyzing quality cost control.
Responsible for preparation of approximately 600-1,000 meals per day in compliance with nutrition policy and procedures and contractual requirements. Accommodate diet restrictions as needed.
Establish and document standards, department goals, and procedures.
Assist in annual Food & Nutrition Program budgeting process and manage the budget throughout the year; inform the Program Manager of significant changes in estimated expenditures and budgetary needs.
Serve as the organization’s focal point of activities involving the food service and meals activities including all special functions.
Work with community partners and volunteers to maintain, develop, and expand partnerships that help meet program and organizational goals.
Manage the preparation and presentation of food and refreshment, in accordance with Federal nutritional guidelines and to meet and maintain customer satisfaction.
Assure consistent, high quality food service and delivery.
Monitor food service activities to ensure that the food produced is professionally served.
Inspect food service equipment to ensure safe and proper operation.
Oversee contract, grant and governmental compliance issues.
Responsible for inventory control and procurement of food.
Ensure “clean” inspection reports from Health Dept., City and County by overseeing effective cleanliness and sanitation throughout the food service sites.
Ensure an injury-free work environment.
Represent the organization at various meetings and functions.
Prepare periodic reports to the Program Manager for use in formulating strategies to maximize the food service position of the agency; prepare and submit reports as required by partner organizations, including the Yolo County Food Bank.
Other duties as assigned by the Program Manager.
Direct, oversee, and maintain relationships with volunteers in a professional environment.

OTHER REQUIREMENTS - Senior Chef

Effective planning skills.
Certification in sanitation and environmental health regulations.
Ability to analyze situations and make effective decisions.
Knowledge of menu costing, nutritional analysis, quantity cooking, purchasing, inventory management, menu planning and food costs.
Ability to analyze market and client trends and make recommendations.
Able to work in a fast-paced changing environment.
Ability to communicate with staff and adults from various backgrounds.
Knowledge of the organization’s mission and populations served.
Knowledge in Excel, Word, Outlook.
Demonstrated ability to train and work as an effective team leader.

EDUCATION AND TRAINING - Senior Chef

A combination of education and experience equivalent to an Associate’s degree in food service management, culinary or related field and 5 years of progressively responsible food service experience; management experience in a non-profit, federally funded environment preferred.
Prior experience with congregate programs is highly desirable.
Must possess or obtain a current ServSafe Certificate
Must possess a valid California Driver’s License

PHYSICAL REQUIREMENTS - Senior Chef

Ability to stand, walk, sit, bend, stoop, twist, reach for moderate periods of time. Fine motor coordination for use of kitchen equipment.
Ability to lift up to 50 pounds
Able to travel to various sites of Fourth and Hope and offsite meetings
Moderate use of computer keyboard and viewing monitor

WORK ENVIRONMENT - Senior Chef

Kitchen with exposure to extreme hot and cold temperatures, noise and cleaning products
Office

Classification: Hourly, Non-exempt

Accountability: Reports to the Program Manager

Hours: Full-time; 40-hour workweek with occasional evening, weekend, holidays
