Position Summary

The Production Cook is responsible for the preparation of food to be served, complying with all applicable sanitation, health and personal hygiene standards, and following established food production procedures. The Production Cook works at a station, for example the grill or fryer, but is cross- trained to work any position in the kitchen.

The responsibilities and duties may include setting stations mise en place, firing food, and plating food. The Production Cook is expected to work as a team with the entire culinary team to prepare meals that are consistently high in quality and delivered rapidly to the front of the house.

Production Responsibilities

Refer to the prep list at the start of each shift for assigned duties
Portion food products prior to cooking according to standard portion sizes and recipe specifications
Maintain a clean and sanitary workstation area including tables, shelves, walls, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range, and refrigeration equipment
Close the kitchen properly and follows the closing checklist for kitchen stations, assists others in closing the kitchen
Attend all scheduled employee meetings and bring suggestions for improvement
Maintain a clean and orderly kitchen by sanitizing surfaces, taking out trash, etc.
Cooking and preparing all menu items in accordance with standards set by the chefs
Stock and maintain sufficient levels of food on the line
Set up and stocking stations with all necessary supplies
Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers, and a variety of other kitchen equipment
Answer, report, and follow chef’s instructions
Ensure that food comes out simultaneously, in high quality and in a timely fashion
Promptly reports equipment and food quality problems to the chefs, inform the chefs immediately of product shortage

Prep Responsibilities

Label and stock all ingredients on shelves so they remain organized and easily accessible
Wash, peel, and chop fruits and vegetables
Clean and cut or grind meat, fish, poultry, and shellfish
Prepare simple items including, but not limited to, salads, sauces, and some entrees
Weigh and measure ingredients, and prepare them in accordance with recipe specifications
Make stock and soups to be used
Perform basic cooking tasks such as stirring, straining, and parboiling food and reducing sauces
Use manual and electric equipment for food preparation
