WHO ARE WE

Fin-Two Japanese Ale House is the first Izakaya theme restaurant within Knoxville's Old City district offering delicacies such as izakaya, ramen, yakitori (skewered & grilled items), sushi selections, and other Japanese fast foods that incorporates local, Southern ingredients.

Kitchen Manager leads the operations of the restaurant and assisting with the development of the team (FOH and BOH). This is a great job for an individual who wants to train and develop others, while also developing their own Management skills in a Family Owned Restaurant!

Requirements:

You have 5 or more years of restaurant or hospitality experience
Assists in maintaining high quality standards including overall development of the menu
Ensure that all food and service is consistently prepared and served according to the appropriate standards.
Helps ensure everything between the FOH and BOH is operating effectively and efficiently
Complete all tasks that pertain to the opening, overall operations, and closing of the restaurant
Helps enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen. Ensure compliance with operational standards, company policies and Health Department codes and regulations.

We are seeking a dynamic and energetic Kitchen Manager to lead our culinary team in delivering exceptional food experiences across our vibrant restaurant environment. This role is perfect for a passionate food industry professional who thrives in fast-paced settings, excels at team leadership, and is dedicated to maintaining the highest standards of food quality, safety, and customer service. As Kitchen Manager, you will oversee daily kitchen operations, ensure efficient food preparation, manage inventory, and foster a positive work environment that encourages growth and excellence.

Responsibilities

Lead and supervise all kitchen staff, including cooks, prep cooks, and dishwashers, ensuring smooth shift operations and high team morale
Oversee food preparation processes to guarantee quality, consistency, and presentation standards are met or exceeded
Manage inventory control by monitoring stock levels, ordering supplies, and minimizing waste using systems like POS or Micros POS
Enforce strict food safety protocols and sanitation standards in compliance with health regulations
Train staff on proper food handling techniques, cooking procedures, and customer service expectations
Coordinate with front-of-house teams to ensure seamless service delivery during peak hours and special events such as banquets or catering functions
Handle cash transactions accurately, including cash handling procedures and POS system management
Assist in budgeting efforts by controlling food costs and labor expenses while maintaining quality standards
Conduct interviews and participate in staff hiring, onboarding, and ongoing training initiatives to build a skilled culinary team
Support management in developing menus, implementing new recipes, and maintaining consistency across all offerings

Pay: $50,000.00 - $60,000.00 per year
