Head Baker & Bakery Operations Manager

(Bakery Production & Scoop Shop Support)

We are seeking an experienced, creative, and hands-on Head Baker & Bakery Operations Manager to lead our bakery production team and help shape the next chapter of a beloved Rhode Island heritage company that has proudly served the community since 1881.

This is an opportunity to play a meaningful leadership role within an established and growing business known for quality, tradition, and customer experience. The ideal candidate is someone who enjoys balancing creativity with operational leadership — developing new products while managing people, systems, and daily production with confidence and consistency.

This position oversees bakery operations, production planning, ordering and inventory management, team leadership, and recipe development. The role also serves as operational backup for the Scoop Shop Manager during vacations, leave, or other absences to help ensure seamless business operations.

Key Responsibilities

Bakery Operations & Production

Oversee all daily bakery production activities to ensure products are prepared accurately, efficiently, and on schedule
Create and manage production schedules based on wholesale, retail, and seasonal demand
Monitor product quality, consistency, freshness, and food safety standards
Coordinate workflow and staffing to meet order deadlines and production goals
Troubleshoot operational issues and adjust production plans as needed

Team Leadership

Lead, train, supervise, and support bakery staff
Foster a positive, productive, and team-oriented work environment
Assist with hiring, onboarding, scheduling, and performance management
Maintain clear communication between bakery production and front-of-house operations

Ordering & Inventory Management

Manage purchasing and ordering of ingredients, packaging, and bakery supplies
Maintain proper inventory levels while minimizing waste and controlling costs
Build and maintain vendor relationships
Track ingredient usage and monitor pricing fluctuations

Recipe Development & Product Innovation

Develop new bakery products, seasonal offerings, and menu items
Test and refine recipes for scalability, consistency, and production efficiency
Calculate food costs, labor impact, and product margins
Establish pricing recommendations based on ingredient costs, labor, overhead, and profitability goals
Standardize recipes and production procedures for team use

Scoop Shop Support

Serve as acting Retail Experience Manager during manager absences, including vacations and leave periods
Support front-of-house operations, staffing, scheduling, and customer service as needed
Ensure continuity of operations and communication between bakery and scoop shop teams

Compliance & Safety

Ensure compliance with all food safety, sanitation, and workplace safety standards
Maintain organized production areas and proper storage procedures
Support health inspections and regulatory compliance efforts

Qualifications

3+ years of bakery production experience, preferably in a leadership role
Experience managing teams in a fast-paced food production environment
Strong knowledge of baking techniques, production systems, and food safety standards
Experience with inventory management, ordering, and vendor coordination
Ability to develop recipes and calculate product costing and pricing
Strong organizational, leadership, and communication skills
Ability to multitask and adapt in a dynamic environment
Availability for occasional weekends and seasonal production demands as needed

Preferred Qualifications

Experience in commercial or wholesale bakery operations
Familiarity with production planning and forecasting
Experience supporting retail or customer-facing food operations
ServSafe Certification or equivalent food safety certification

Compensation

Salary range: $55,000–$65,000 annually, based on experience and qualifications

Schedule

Bakery production shifts typically begin between 7:00–8:00 AM
Shifts generally conclude between 3:00–5:00 PM
Stable and predictable daytime scheduling compared to many traditional food service environments
Occasional weekends and seasonal production support may be required
