Caviar Kitchen Operations & Facilities Manager

Location: Los Angeles, CA

Operating from our FDA-registered production facility in Los Angeles, we are committed to delivering exceptional quality while maintaining the highest standards of food safety, operational excellence, and customer service.

Position Overview

We are seeking an experienced and hands-on Kitchen Operations & Facilities Manager to oversee the daily operations of our FDA-registered food production facility, fulfillment department, retail kiosk, and event operations.

This is a leadership position responsible for managing production, inventory, shipping, facilities, food safety, regulatory compliance, staffing, and operational performance. The successful candidate will have significant experience working within an FDA-regulated food manufacturing environment and possess extensive knowledge of Seafood HACCP, FSMA, GMPs, sanitation, traceability, and food safety compliance.

This is not a traditional restaurant management position. We are seeking an experienced food manufacturing operations professional with a strong background in regulatory compliance and operational leadership.

Key Responsibilities

Oversee the day-to-day operations of our FDA-registered caviar production facility.
Manage kitchen production, fulfillment, shipping, warehouse operations, retail kiosk, and event logistics.
Lead, train, schedule, and develop production and operations staff.
Maintain full compliance with FDA regulations, Seafood HACCP, FSMA, GMPs, sanitation standards, and company SOPs.
Maintain HACCP documentation, food safety records, traceability systems, temperature logs, and regulatory documentation.
Lead FDA, Health Department, and third-party inspections while ensuring the facility remains inspection-ready.
Manage inventory, purchasing, stock rotation, and operational cost controls.
Oversee cold-chain logistics, shipping accuracy, packaging standards, and customer fulfillment.
Manage facility maintenance, equipment servicing, contractors, and capital improvement projects.
Develop and improve operational workflows, productivity, and departmental KPIs.
Collaborate with Sales, Customer Service, Marketing, and Leadership to support company growth and operational excellence.

Required Qualifications

Minimum 5 years of management experience within a commercial food manufacturing or food production environment.
Previous experience managing an FDA-registered food production facility is required.
Current Seafood HACCP Certification is required.
Strong working knowledge of FDA regulations, FSMA, Seafood HACCP, GMPs, sanitation programs, food safety systems, and traceability requirements.
Demonstrated experience successfully managing FDA, Health Department, or third-party food safety inspections.
Strong experience managing fulfillment, warehouse, inventory, purchasing, and shipping operations.
Proven leadership experience managing production and operations teams.
Excellent organizational, project management, and communication skills.
Strong Excel, reporting, and operational KPI management skills.
Ability to lead by example within a fast-paced production environment.

Preferred Qualifications

PCQI Certification.
ServSafe Manager Certification.
Experience within seafood, premium food manufacturing, or refrigerated food production.
Experience managing luxury retail or hospitality operations.
