Full Job Description

Position Summary:

Nobu, one of the most recognized Japanese restaurant brands in the world, is seeking an experienced Sushi Chef to join our team at Nobu Atlanta.

The Sushi Chef is responsible for preparing high-quality sushi and other Japanese cuisine while maintaining Nobu's standards for quality, presentation, cleanliness, and guest experience. While the Sushi Chef is expected to perform the duties outlined below, one of the most important aspects of this role is working closely with management and fellow team members to create an exceptional dining experience for our guests.

Responsibilities:

Prepare sushi, sashimi, rolls, and other menu items according to Nobu recipes, presentation standards, and specifications.
Ensure all food is prepared and presented consistently and meets Nobu's quality standards.
Properly handle, prepare, portion, and store fish, seafood, rice, vegetables, and other ingredients.
Maintain proper food temperatures, sanitation practices, and food safety standards at all times.
Inspect ingredients for freshness and quality before preparation and service.
Maintain a clean, organized, and properly stocked sushi station throughout the shift.
Complete assigned opening, closing, preparation, and cleaning duties.
Follow proper procedures for labeling, dating, rotating, and storing food products.
Minimize food waste through proper preparation, portioning, handling, and storage.
Communicate effectively with culinary team members, servers, managers, and other departments during service.
Work efficiently in a high-volume, fast-paced environment while maintaining attention to detail and presentation. Respond appropriately to guest allergies, dietary restrictions, and special requests in accordance with established procedures.
Follow all company policies, food safety requirements, sanitation standards, and health department regulations.
Maintain professionalism, composure, and teamwork during high-volume service periods.
Assist other culinary team members as needed to support restaurant operations.
Perform other duties as assigned by management.

Required Skills/Qualifications:

Minimum of 2 years of Sushi Chef experience, preferably in a high-volume, upscale or fine-dining restaurant.
Strong knowledge of sushi preparation, fish handling, knife skills, and food safety practices.
Ability to consistently produce high-quality food while following established recipes and presentation standards.
Must be punctual, dependable, and able to maintain regular attendance.
Must communicate effectively with management and team members.
Ability to maintain composure and attention to detail while multitasking in a high-stress, fast-paced environment.
Excellent interpersonal and communication skills.
Demonstrates patience, professionalism, teamwork, and integrity.
Ability to follow instructions and established culinary procedures.
Must be available to work a flexible schedule, including varied shifts Sunday through Saturday, weekends, holidays, and lunch and/or dinner shifts based on business needs.

Physical Requirements:

Ability to stand and work for extended periods.
Ability to bend, reach, lift, carry, and perform repetitive motions associated with food preparation.
Ability to safely use knives and other commercial kitchen equipment.
Ability to work in a fast-paced kitchen environment and safely lift items as required by the position.
