Full Job Description

Overview:

The Chef is responsible for the daily leadership and management of the Catering Company's Culinary Department, which provides and distributes all of the culinary needs for catered events on and off premise. The Chef is an organized and resourceful leader who proactively manages all of the responsibilities of the kitchen. This is accomplished by working with their staff to provide difference making moments for guests from menu development to final execution. The cuisine provided is of exceptional quality and current with culinary and market trends and developed for both the on and off-premise catering environment. This is a working position where 85% of the chef's time is dedicated to cooking.

Function:

Development, management and maintenance of all operational aspects, following open book financial principles, and personnel policies, practices, and initiatives associated with the growth and success of the company.

Responsibilities:

1. Menu development inclusive of:

a) Seasonal offerings, farm to table concepts and sustainable/green initiatives

b) Special requests and themes

c) Promotional menus

d) Quarterly tastings for sales staff

e) Oversight includes:

Oversee development, implementation and maintenance of all standardized recipes, production standards and par levels
Lead synergistic development and implementation of new industry leading menu items and concepts focusing on quality ingredients and cutting edge presentation in the environment of both on and off-premise catering, keeping in mind plated and buffet presentation styles.

2. Develop and maintain consistent and comprehensive training sessions for both on and off-premise kitchen staff focusing on but not exclusive of:

a) Off site execution

b) Sanitation

c) Culinary skills

d) Organizational skills

e) Professional conduct

f) Employee morale

3. Control and monitor kitchen labor and food costs through management of the kitchen. Utilize weekly production meetings and menu reviews.

4. Maintain sanitary standards of the main kitchen and for all off site events food preparation and service areas.

5. Oversee daily production in the kitchen.

6. Maintenance of kitchen facility and equipment.

7. Work in conjunction with sales staff aiding in the development of menus and programs, which facilitate the sales effort.

8. Assist in the operations of actual events as needed.

9. Maintain food cost percentages at or below budget allocations.

10. Maintain vendor relationships and analyze and recommend new products and vendors.

11. Work in a sales support capacity representing the company at industry organizations, tastings and networking events.

12. Oversee and manage in-house tastings to ensure not only consistency from table to event but to leverage the tasting as a sales tool.

13. Help support corporate goals through other duties as necessary.

Pay: $60,000.00 - $70,000.00 per year
